Serves 10 people

Ingredients for the Citrus Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar

To make the Drink (yields 850ml, to serve 10)

400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch

Instructions

For the Citrus Syrup: Place all the items inside a pot, heat until it reaches a simmer, stirring to dissolve. Next, turn off the burner allowing it to cool down fully. Transfer into a sterilised bottle, cap it and refrigerate it in the refrigerator, where it will keep for up to four weeks.

For the Batch Mix: Combine the specified spirits and syrup in a large bottle, allow it to infuse for an hour, then filter it best through cheesecloth, so it's completely strained.

When ready to serve: Add 85ml from the cocktail base into your cocktail shaker filled with ice, and stir carefully for about 60 seconds to chill. Pour to a cold coupe glass or a similar vessel, garnish with the cranberries adding the final touch by giving it a quick spritz of the essential oil over the top.
